The KAI knife collection and practical accessories by Chef Danny Khezzar represent a harmonious blend of Japanese knife craftsmanship and creative cuisine. In autumn 2026, the collection will be expanded to include four additional blade shapes. The blades of this knife series, crafted from 3-layer steel, are adorned with Danny Khezzar’s logo in Japanese script; the special packaging with a sleeve ensures the safe storage of the Danny Khezzar Kaname knives.
His deep affinity for Japanese knives led to a collaboration with Kai, the leading manufacturer of high-quality damask knives: For the new Danny Khezzar Kaname knife series, the traditional Japanese cutting tool has been reinterpreted with a contemporary design: the traditional knife shape and octagonal handle made from black-grained pakka wood see tradition meet innovation from this celebrity chef, who has over 1.2 million followers on Instagram.
The celebrity chef sacrificed a great deal for his rise to the culinary elite: during his training at the ‘Ritz’ in Paris, he had to cycle for an hour at night to get home to the suburbs from the city centre, as there were no more trains running. “I often didn’t get more than four hours’ sleep,” he recalls.
Today, the 30-year-old is head chef at the Bayview restaurant (18 GaultMillau points, 1 Michelin star) at the President Wilson Hotel in Geneva. His enthusiasm for Japanese culture and cuisine is also reflected in his latest restaurant, Izakaya, in Geneva, where Khezzar creates Japanese cuisine at its finest.
